There is a corner of the Amalfi Coast that still preserves the simple and authentic charm of tradition: we’re in Tramonti, the green heart of the Monti Lattari, and more precisely at Il Frescale Country House, a farmhouse that is both a restaurant and a peaceful retreat for those seeking flavor, quiet, and a touch of poetry.
After some time away, we returned - and the most delightful surprise was seeing Pilù, the famous fox who, for years and especially during winter, visits guests beneath the pergola. This time, she wasn’t alone: by her side was a young fox, affectionately called Fofò, possibly her daughter - symbol of a bond between nature and humanity that is quietly renewed here in mutual respect.
At the table, the cuisine speaks the language of the land and memory. Starters tell the story of the territory: local cured meats, fresh ricotta, rustic croutons, pickled vegetables, and traditional dishes. The first courses feel like a warm embrace: paccheri alla genovese and fusilli with ragù of black pig, served in generous portions and scented with fresh basil. Not to be missed are the fried pizzelle, golden and light - an authentic throwback to the flavors of the past.
The pizzas, made with high-hydration doughs, stray from the traditional Tramonti style to embrace the modern Neapolitan approach: airy crusts, light texture, and genuine flavor. Among those we tried were a spicy diavola with hot salami and a classic margherita topped with fried potatoes.
The journey ends with a classic of Italian pastry: tiramisu! A layered dessert of chocolate mousse with mascarpone and coffee-soaked ladyfingers, served in a jar, followed by house-made liqueurs: nocino, limoncello, and the unmissable concerto.
Il Frescale is more than a restaurant: it is a place where cooking is an act of love, guests are treated like family, and nature—even the wild kind—is welcomed and respected.
For those looking to step away from the spotlight of the busier parts of the Amalfi Coast, and rediscover the value of slowness, authenticity, and sincere hospitality, Il Frescale remains an essential stop.
